A recipe in passing
Hey all, have had nothing to talk about today, so thought of posting an experiment in my kitchen. If you don't know me, I am kind of an inconsistent cook. I already have written about my kitchen bloopers earlier in the week. But I also can't help experimenting......:) This time I was lucky.
Picture first - a thali (sarson da saag, bajre ki roti and guvar fali sabji)
1.The sarson da saag actually came out of a tin, just spiced it up with some onion-tomato-ginger-garlic masala.
2.Bajre ki roti is also the normal recipe, since I am not an expert, I added some wheat flour to be able to roll them better.
3. Guvar fali sabji - this one is made from rehydrated guvar fali. Soaked dried ones in water, pressure cooked them and then fried them in oil with some garlic, and regular chilli powder, coriander powder and amchoor. Somewhat similar but nothing close to Ker Sangri (which is a big favorite of mine).
My friend A tells me this is a very popular meal in Rajasthan - bajre ki roti, with dry guvar fali sabji and salted yogurt.

ReplyDeleteI don't know how to make sarson ka saag - keep thinking I should learn especially in this season when we get fresh sarson but not motivated enough !
Thanks Aparna, I don't know if they use the same beans in Ker Sangri. These are sun-dried cluster beans. Yes, making it from fresh sarson is a little time-consuming.

ReplyDeleteI make bajre ki roti.... here's a tip... use hot water for making the dough. Make the dough initially using minimum water and then gradually loosen it by adding water. You will be able to roll them (almost) like wheat rotis.

This is from the tin, so not much work. No, not yet, I need to get yeast! Also I read from your conversation that it takes time to proof, I normally give up after 5 mins, thanks for that tip.

Yes, that would be an ideal combo, but for some strange reason we don't get good makki aata here. So the roti's don't come out well.
